Can a cookie jar double as a sourdough crock?

The Folinstall jar holds 1 gallon in a Mason-style body 9.8 inches tall and 6.5 inches across. You lift off an easy-grip glass lid and get a measuring cup or a whole hand through the mouth. Printed scales in ounces and milliliters run up the side, so you can see how much flour is left without opening it.

The silicone gasket comes out completely. Leave it in and the maker calls the jar airtight, which suits cookies, dog treats and coffee. Take it out and air can move, which is what a sourdough starter needs while it rises. A half gallon version, 64 ounces, is offered for a smaller counter.
